First thing, if you live near a Costco, you’re gonna what to run out and grab yourself a pack of these 100% All Natural Turkey & Chicken Sausages. While you’re there, pick up a few packs and freeze them. Trust me you WILL LOVE them!!
Stock up!
They are great grilled on the barbeque and added to a spinach salad, or tossed in a pesto pasta dish…yum!
Ok, here is the recipe:
LYL Lean Sausage Breakfast Scramble
2, 100% All Natural Turkey & Chicken Sausages, chopped
1, bell pepper, whatever color you like, chopped
1 cup red onion, chopped
4, cups of fresh spinach
4, whole eggs
1 cup of liquid egg whites
2, tsp. olive oil
Optional: green onions, chopped for garnish
Instructions:
Step 1: Heat 1 tsp. of olive oil in a skillet over medium heat. Add sausage, peppers and onions. Sauté until sausage starts to brown and veggies are soft.
Step 2: Then add spinach, one cup at a time and continue to sauté until all spinach has wilted.
As you can see 4 cups doesn’t look like much once it’s all wilted.
Step 3: While you are sautéing the sausage and veggie mixture, heat a second skillet with the second tsp. of olive oil over medium heat. Add whole eggs, egg white and scramble until fluffy.
Step 4: Turn off both burners and let skillets cool while you begin to plate your dish.
Step 5: Grab a plate and spoon out ¼ of the sausage and veggie mixture and place in the middle of your plate. Top with ¼ of the scrambled eggs and garnish with a sprinkle of chopped green onions.
This recipe make 4 servings… well ok if you have a big eaten in your home like I do, it makes one serving for me and one serving for Mike…lol.

Hey Courtney:
I tried these from the Moncton Costco. They have the chicken & turkey with sundried tomato & oregano. I’m not a fan of sausages of any kind, but if you recommended them, so I had to give them a try. They were really, really good. I can’t wait to try them up in other dishes. Thanks Courtney. keep the yummy suggestions coming 🙂
