Tuna Niçoise Salad

This classic salad is the perfect Summer Slimming Dish.  Light and healthy but super tasty; so simple and easy to whip-up it’s the perfect meal if you’re short on time.

INGREDIENTS:

½ can of tuna or 3oz grilled tuna steak

1 egg, boiled, peeled and halved or quartered

2 handfuls of chopped romaine or Boston lettuce

2oz of green beans, stem ends trimmed and each bean cut in half

4 cherry tomatoes, halved

1 tbsp. red onion, sliced

Olives (optional)

Dressing:

4 tbsp. extra virgin olive oil

Juice from 1 lemon

1 tbsp. Dijon mustard

1/2 tsp. dried basil

½ tsp. dried oregano

Season w/ salt and ground pepper

INSTRUCTIONS:

Blanch the green beans in a pot of boiling water for 2-3 minutes, then drain and run under cold water. Drain and transfer to a alrge bowl with lettuce, cherry tomatoes and red onion.

Break the tuna into bite-sized pieces and add to the salad ingredients along with boiled egg halves.

Whisk all the dressing ingredients together and season well. Pour 1/4 of the dressing over the salad and store remaining dressing in the fridge. Gently toss the salad. Cover and chill in the fridge until ready to eat.

Serves 1 (dressing makes 4 servings)
