Homemade Chocolate Oatmeal Protein Bars
INGREDIENTS
1 ½ cup gluten-free oats
½ cup vanilla protein powder
1 tsp. baking powder
½ tsp. sea salt
1 tsp. cinnamon
1/2 cup baking stevia or 1 cup sweetener of choice that measures like sugar
¼ cup unsweetened almond milk
¼ cup honey
2 small bananas, mashed
¼ cup almond butter
2 whole eggs, beated
1/ 4 cup sliced almonds or coconut flakes
6-8 ounces dark chocolate, chopped into chunks (about 1 1/2 cups)
INSTRUCTIONS
Preheat oven to 350 degrees.
Line a 9 x9-inch baking pan with parchment paper.
In large bowl mix together oats, protein powder, baking powder, salt, cinnamon, and sweetener.
In medium bowl mix together alomnd milk, honey, bananas, almond butter, and eggs
Add milk mixture slowly into the oat mixture and stir until everything is combined.
Pour batter into prepared pan, sprinkle with almond slices or coconut and bake for 30 minutes or until bars are set.
Remove cooked bars from the oven. Melt dark chocolate in a microwave safe bowl and drizzle over the bars.
Allow to cool completely and cut into 12 bars.
