Soft Baked Banana Breakfast Bites

INGREDIENTS

1 cup gluten-free oats

½ cup vanilla protein powder

½ tsp. baking powder

¼ tsp. baking soda

¼ tsp. sea salt

½ cup sweetener that measures like sugar

½ cup unsweetened almond milk

½ cup almond butter

½ cup mashed banana

2 whole eggs, beaten

INSTRUCTIONS

Preheat oven to 350 degrees.

Line a 9 x9-inch baking pan with parchment paper.

In large bowl mix together oats, protein powder, baking powder, baking soda, salt, and sweetener.

In medium bowl mix together almond milk, almond butter, bananas, almond butter, and eggs.

Add milk mixture slowly into the oat mixture and stir until everything is combined.

Pour batter into prepared pan and bake for 15-20 minutes or until bars are set.

Remove cooked bars from the oven. Allow to cool completely and cut into 8 bars or 24 bites.

Yields: 8 bars or 24 bites
