Mini Chocolate Lava Cake

Delicious dark chocolate lava cake dessert served with whipped cream and fresh raspberries. Surrounded by Christmas ornaments.

Ingredients

5oz high quality 70% cocoa dark chocolate

4 Tbsp. organic unsalted butter

(plus a little more for greasing the ramekins)

¼ cup raw honey

1 tsp. coconut flour

(plus a little more for dusting the ramekins)

2 tsp. raw cacao powder

(plus a little more for greasing the ramekins)

½ tsp. sea salt

2 whole eggs, plus 2 egg yolks, beaten

1/2 tsp. pure vanilla extract

Instructions

Preheat oven to 375°F.

Grease four 6-oz ramekins with butter. Heavily dust each ramekin with a half and half mixture of coconut flour and cacao powder.

In a double boiler, gently melt the chocolate, butter and raw honey.

In a small bowl, beat eggs, vanilla, and salt with a hand mixer until light and frothy, about five minutes.

Pour egg mixture over chocolate.

Sift coconut flour and cacao powder over the top.

Then gently fold all the ingredients together.

Divide the batter evenly among prepared ramekins. Place the ramekins on a baking sheet and place in the oven (you can chill the ramekins for a few hours if you want to make them ahead of time, just make sure you bring them back to room temperature before baking).

Bake for 10-12 minutes.

Remove from oven and serve immediately.

Or if you wish to serve these cakes on a plate, allow ramekins to cool for 3 minutes.

Run knife around edges and turn out onto plates. Garnish with whipped coconut cream and fresh berries.
