Chia seeds are a Superfood Treasure!

They add a tasty crunch and create a hydrating gel that works wonders as a thickener in smoothies and puddings. Blue Chia
Chia seeds soak up liquid very rapidly so make sure you drink this smoothie within a few minutes of blending it. Otherwise you will be eating it with a spoon; which can be fun too!
Ingredients:
1 cup unsweetened almond or coconut milk
1 cup fresh or frozen blueberries
1 tbsp. chia seeds
1 scoop of vanilla protein powder
3-6 ice cubes (optional)
Instructions:
Add ingredients to blender and blend until creamy consistency is reached.
Yields: 1 Serving

Banana Coconut Chia Pudding
This decadent dessert takes less than 5 minutes to make and delivers impressive amounts of fiber and omega-3 fatty acids.
Ingredients
2 cups unsweetened coconut milk
½ cup unsweetened shredded coconut, plus more for garnish
¼ cup maple syrup
1 tsp. pure vanilla extract
¾ tsp. ground cinnamon
pinch sea salt
¼ cup chia seeds
2 ripe bananas, divided
Instructions
Place coconut milk, shredded coconut, maple syrup, vanilla, and cinnamon into a blender and blend on high for 2 minutes.
Transfer mixture to a glass bowl or large jar and stir in the chia seeds.
Chill in the fridge for at least 3 hours stirring occasionally to evenly distribute the chia seeds.
Once chilled, stir the mixture again and then add 1 mashed banana.
Transfer the mixture to 4 serving bowls and top with chopped banana and shredded coconut.
